This session was grounded in Restaurant365’s 2025 Midyear State of the Industry Survey, drawing on insights from over 5,000 restaurant locations across the country. From food and labor cost trends to tech adoption and operational strategy, it covered the insights that matter most for both back-of-house and front-of-house success.

Solutions Architect
With a deep background in technology and over 25 years in restaurant operations and accounting, Marc Cohen is the Solutions Architect at Restaurant 365. He began his career with a large national restaurant group, helping them grow to 120 units, then joined two LA-based celebrity chefs, running operations and overseeing their tech stack. This led him to run the restaurant business management team for a top 100 accounting firm, where he consulted for restaurant clients and evaluated new technology solutions. Through these roles, he developed expertise in software implementations, POS integrations, menu engineering, operational efficiencies, financial reporting, and business intelligence.
